Ingredients:
- 1 medium eggplant
- A pinch of salt
- A pinch of pepper
- 1 cup ricotta cheese
- 1 cup grated parmesan cheese
- 1/3 cup basil leaves, chopped
- 1 egg
- 1 cup tomato sauce
Cheesy Eggplant Roll Ups – method of preparation:
- Preheat the oven to 350°F/ 180°
- Slice eggplant lengthwise.
- Arrange slices on a baking parchment and sprinkle a pinch of salt.
- Let stay for 20 minutes.
- Absorb the excess water with a paper napkin.
- Sprinkle some black pepper.
- Bake for 20 minutes.
- In a bowl, combine ricotta cheese, ½ cup grated parmesan, basil leaves, and egg.
- Stir well using a fork.
- Spread the mixture over each eggplant slice and roll up.
- Place ½ cup tomato sauce in a baking pan and add eggplant roll ups.
- Pour the remaining tomato sauce and top with cheese.
- Bake for 20 minutes.
