What a marvelous way to add some refreshing Greek touch to the classic cooked rice. This easy rice salad is served cold and has a delicious spicy taste with the sharp, tangy and rich aroma of feta cheese. Can it get any better?
Prep time: 30 min (+ 1h in the fridge); Servings: 4
- 1 cup cooked rice
- 1 cup tomato, chopped
- 1 cup feta cheese
- 1 basil sprig, chopped
- 1 tsp. dried oregano
- 2 tbsps. olive oil
- Juice of 1 lemon
Method of preparation:
- Mix cooked rice, tomato, feta cheese, basil, salt, oregano, olive oil and lemon juice in a bowl.
- Stir well.
- Cool in the fridge for an hour.
- Serve cold.
