This is a beautiful combination of eggplant, tomato and cheese. Healthy, spicy and delicious, grilled eggplants make the perfect side dish to accompany any meal. Prep time: 30 min; Servings: 4
- 1 eggplant
- 8 tomato slices ( 2 small tomatoes)
- Cheese, grated
- A dash of Himalayan salt
Method of preparation:
- Cut the eggplant lengthwise.
- Lightly grease a grill pan and place tomato slices.
- Sprinkle with Himalayan salt and grill for about 5 minutes each side.
- Transfer eggplant in a baking tray previously covered with baking parchment.
- Top with tomato slices and finally with cheese.
- Decorate with parsley.
