Quinoa Salad with Beetroot and Sunflower Seeds- Nutritious and Delicious

This healthy and tasty salad is a toss together of quinoa, beetroot, carrot, lettuce, sunflower seeds, salt, pepper lemon juice and olive oil. Quinoa is high in proteins and fiber and combines perfectly with all kinds of vegetables. You can prepare it in no time and it makes a great make-ahead for picnics or tapas parties. Enjoy!

Ingredients:

  • 1 cup of cooked quinoa
  • 1 cup of beetroot
  • 1 cup of carrots
  • 1 cup of lettuce
  • ½ cup of sunflower seeds
  • 2 tbsps. mint leaves
  • 1 tbsp. of salt
  • ½ tbsp. of black pepper
  • 1 tbsp. of olive oil
  • Juice of 1 lemon

Method of preparation:

  1. Combine all the ingredients in a bowl and stir well.
  2. Serve.
