These baked eggplant slices are stuffed with a delightful combination of ricotta, parmesan, egg and basil leaves, perfectly coated with delectable tomato sauce.   • 1 medium eggplant
  • A pinch of salt
  • A pinch of pepper
  • 1 cup ricotta cheese
  • 1 cup grated parmesan cheese
  • 1/3 cup basil leaves, chopped
  • 1 egg
  • 1 cup tomato sauce

Cheesy Eggplant Roll Ups – method of preparation:

  1. Preheat the oven to 350°F/ 180°
  2. Slice eggplant lengthwise.
  3. Arrange slices on a baking parchment and sprinkle a pinch of salt.
  4. Let stay for 20 minutes.
  5. Absorb the excess water with a paper napkin.
  6. Sprinkle some black pepper.
  7. Bake for 20 minutes.
  8. In a bowl, combine ricotta cheese, ½ cup grated parmesan, basil leaves, and egg.
  9. Stir well using a fork.
  10. Spread the mixture over each eggplant slice and roll up.
  11. Place ½ cup tomato sauce in a baking pan and add eggplant roll ups.
  12. Pour the remaining tomato sauce and top with cheese.
  13. Bake for 20 minutes.
