Colorful Pudding Cake

I call this cake The Happy Cake because my kids were extremely happy when I made it. Strawberry instant pudding gets a beautiful pink color, with rainbow sprinkles and whip, creating an amazing sweet fairytale. As the festive season is knocking at the door, this easy and colorful dessert will satisfy everyone on your table and your guests will be begging for more.

Prep time: 60 min; Servings: 6-8


  • 5 oz melted butter
  • 1 cup sugar
  • 2 eggs
  • 1 tbsp. vanilla extract
  • A pinch of salt
  • 1 cup of flour
  • 1 cup colored sprinkles

Strawberry Pudding Cream:

  • 1 package strawberry pudding
  • 2 tbsp. sugar
  • 4 oz milk
  • 1 ¼ cup milk

Whipped Cream Frosting

  • 1 package whipping cream powder
  • 4 oz milk

Method of preparation:

  1. Preheat the oven to 350° F/ 175°
  2. In a bowl, beat melted butter and sugar.
  3. Gradually add eggs, vanilla extract, salt, flour and sprinkles, whisking constantly.
  4. Place batter in a glass baking pan, line with baking parchment.
  5. Bake for 25-30 minutes.

Strawberry Pudding Cream:

  1. In a bowl, mix strawberry pudding powder, 2 tbsps. of sugar, and 4 oz milk. Whisk.
  2. In a heatproof bowl, bring 1 ¼ milk to boil and add strawberry pudding mixture. Stir until thickened and then remove from heat.
  3. Spread pudding layer over the cake and let it chill for 2 hours.

Whipped Cream Frosting:

  1. In a measuring cup, mix whipping cream powder and 4 oz milk.
  2. Beat until stiff.
  3. Gently spread whipped cream on the top of the cake and sprinkle with color sprinkles.
  4. Serve.
