Delish Tomato and Rice Salad with Basil and Feta Cheese

What a marvelous way to add some refreshing Greek touch to the classic cooked rice. This easy rice salad is served cold and has a delicious spicy taste with the sharp, tangy and rich aroma of feta cheese. Can it get any better?

Prep time: 30 min (+ 1h in the fridge);  Servings: 4


  • 1 cup cooked rice
  • 1 cup tomato, chopped
  • 1 cup feta cheese
  • 1 basil sprig, chopped
  • 1 tsp. dried oregano
  • 2 tbsps. olive oil
  • Juice of 1 lemon

Method of preparation:

  1. Mix cooked rice, tomato, feta cheese, basil, salt, oregano, olive oil and lemon juice in a bowl.
  2. Stir well.
  3. Cool in the fridge for an hour.
  4. Serve cold.
