Floating Islands- Your Perfect Creamy Dessert!

This is unique and absolutely delicious dessert. It is a combination of light and fluffy meringues, shards of spun sugar and perfectly creamy custard. Your friends and family will love it!

For the white cream:

  • 3 egg whites
  • 1 tbsp. sugar
  • 2 cups milk
  • 3 egg yolks

For the yellow cream:

  • 3 egg yolks
  • ½ cup milk
  • 3 tbsps. sugar
  • 1/3 cup wheat sugar

Method of preparation:

  1. Beat the egg whites and sugar in a bowl until still.
  2. Heat the milk to almost boiling.
  3. Add 5 tablespoons of the egg whites in the milk and stir well. Then reduce the heat to low.
  4. For the yellow cream, combine the milk with egg yolks, sugar and wheat and beat until very thick and bright yellow.
  5. Add the yellow cream in the milk and stir well.
  6. Remove from the heat.
  7. Serve in dessert glasses starting with the egg whites and then add the yellow creamy mixture.
