Kiwi and Lettuce Salad Recipe to Stay Fresh All Day

Quick and easy, yet incredibly delicious and refreshing! It is my mom`s favorite and I make it every time she comes to visit us. I grew up with this salad and it always reminds me of my childhood. Sometimes I leave out avocado since I`m not the biggest fan of its buttery taste. The list of ingredients is a bit long but don`t worry, most of them you already have in your kitchen.

  • A head of lettuce, chopped
  • oz. canned black beans
  • 7-8 cherry tomatoes, cut in halves
  • 1 avocado, chopped
  • 2 kiwi, chopped
  • 1 orange, chopped
  • 1 clove of garlic, chopped
  • 1 green onion
  • Fresh basil, chopped
  • Fresh parsley, chopped
  • Salt
  • 2 tbsp. orange juice
  • 2 tbsp. olive oil
  • 1 tbsp. balsamic vinegar

Method of preparation:

  1. Put all the ingredients in a bowl and stir well.
  2. Serve.
