Mozzarella Stuffed Mushrooms

Stuffed mushrooms are regular guests on my holiday table. They are highly versatile so you can stuff them with anything you like and still taste delicious. There are numerous versions of stuffed mushrooms, but my family prefers the classic vegan version, with cheese, garlic, bread crumbs and nuts.

I regularly serve them on Thanksgiving and Christmas Eve because I know everyone will love them. I mean, who can resist a cheesy delight? They are so perfectly tender and incredibly cheesy. Garlic, onion, and green pepper add that special spicy flavor that makes them the most amazing bite size appetizers.

Prep time: 40min; Servings: 8


  • 8 mushrooms
  • Melted butter
  • 1 tbsp. oil
  • 1 garlic clove
  • ½ small onion
  • ½ small green pepper
  • A dash of black pepper
  • 1 tbsp. lemon juice
  • ¼ cup parsley, chopped
  • ¼ cup bread crumbs
  • ¼ cup grated parmesan
  • ¼ cup grated mozzarella
  • 2 tbsps. almonds, chopped

Method of preparation:

  1. Preheat the oven to 180°
  2. Wash mushrooms and remove stems.
  3. Chop the stems.
  4. In a skillet, melt butter over medium heat. Add onion and green pepper. Stir. Then, add chopped mushroom stems and garlic. Stir.
  5. Next, add parmesan, mozzarella, parsley, bread crumbs, black pepper, almonds and lemon juice. Stir well.
  6. Place baking parchment on a baking tray and arrange the mushroom caps.
  7. Fill each mushroom cap with the stuffing.
  8. Bake for 20-25 minutes.
  9. Serve warm.
