Quick and Easy Rice and Vegetable Saute

This combination of veggies is my favorite. It has become a trademark in my kitchen. I usually add some carrots and oregano and serve it with pasta. Also, sometimes I add pieces of smoked meat to enhance the flavor, but in this case, I leave out soy sauce and cucumber. You really have no idea how tasty it is! The best of all, it goes perfectly with any kind of pasta, rice, meat, and seafood. Plus, you can adjust the ingredients according to your taste.

Prep time: 25 min; Servings: 4


  • A piece of red onion
  • A piece of white bell peppers
  • A piece of green bell peppers
  • A piece of green onion
  • ¼ piece of cucumber
  • ½ cup canned corn
  • ½ cup table mushrooms, chopped
  • 1 tsp. salt
  • ½ tsp. black pepper
  • 1 garlic clove
  • 2 tbsps. soy sauce
  • 1 ½ cup rice

Method of preparation:

  1. Cook the rice for 15 min.
  2. Stir fry the veggies. Season with salt and pepper.
  3. Add soy sauce, stir and remove from heat.
  4. Serve with cooked rice.

It is a quick and easy lunch or dinner, packed with proteins and other essential nutrients. Your family will gobble it up!
