Roasted Rum-Marinated Chicken Breasts

This is a simple and super easy way to give a fabulous, spicy flavor to classic chicken breasts. My husband adores rum, whether as a drink, in a dessert, or in a main, so he loved these moist, juicy, rum marinated chicken breasts. Everything is so perfectly warm, tender and full of flavor.

If you are in a rush, you can let the chicken marinade for 30 minutes, it won`t make a big difference. I prefer to marinade it as long as possible in order to absorb the flavors completely and become as tender as possible.

Prep time: 20 min (+ 2h in marinade); Servings: 2


  • 1 lb chicken breast
  • 4 tbsps. rum
  • Juice of one lemon
  • 1 tbsp. salt
  • ½ tsp. black pepper
  • 1 garlic clove
  • 1 sprig of parsley

Method of preparation:

  1. Slice chicken lengthwise and place in a bowl.
  2. Add rum, lemon juice, salt, black pepper, garlic, and parsley.
  3. Let it marinade for 2 hours.
  4. Lightly grease baking pan with sunflower oil.
  5. Serve.
