Super Crunchy Vegan Salad with Cabbage and Peanuts

Crunchy cabbage, sweet carrots, spicy onions and nutty peanuts make the perfect protein veggie salad. It is a combination of light and refreshing yet delicate and extremely appetizing flavors. What I really love about this salad is its variety of simple and healthy ingredients, full of flavors. Optionally, you can add some chicken, avocado or anything you wish.

  • 1 cup of chopped cabbage
  • ½ cup of grated carrots
  • 2 pieces of sliced paprika
  • 1 sliced red onion
  • 1 cup of peanuts
  • 1 tbsp. of salt
  • 2 tbsps. of olive oil

Method of preparation:

  1. Combine all the ingredients in a bowl and stir well.
  2. Serve.

I eat salads every day and never get tired of them. Usually put them in everything so that my kids can get a hearty helping of vegetables regularly. You can always add your favorite veggies to the combination. Also, you can make it with some shrimps or chicken for a non-vegetarian salad. This veggie mix makes the perfect side for grilled or fried chicken, or can be your ideal light dinner.
