Yummy Leek Salad with Carrots and Mayonnaise

We have officially welcomed the cold-and-flu season. I`m not the biggest fan of cold and rainy weather and these days I`m totally focused on keeping my and my family`s immunity strong enough to face all these challenges. Onion, garlic and leek are the best natural immunity-boosters and I try to consume them at least once a day. This salad is an excellent source of vitamins and other essential nutrients. Many will immediately discard it from their menu options because of the leek. It has a strong taste, I know, but when combined with carrots and mayonnaise, it gets totally different flavor without changing its nutritional value. Still, if you really can`t stand leek, you can leave it out or use lettuce instead.

Prep time: 20 min; Servings: 2

Ingredients:

  • 2 tbsps. mayonnaise
  • A pinch of salt
  • 1 tbsp. olive oil
  • A pinch of pepper
  • 1/3 cup leek, chopped
  • 1/3 cup carrots, chopped
  • 1/3 cup canned corn

Method of preparation:

  1. Combine all the ingredients in a bowl and stir.
  2. Serve.

Salads are wonderfully versatile so you can add anything you want. It is simple, delicious, and most of all, highly nutritious. You can serve as a side to any meal or have it as a light, quick lunch, it`s up to you. I combined it with pork chops and baked potato.
